Shrimp and Pork Salad

Ethnicity: Vietnamese

Serve 6:

  • 1 cup cooked shrimp

  • 1 lb. pork meat

  • 1 cup sweet and sour salad

  • 1 hot red pepper scored lengthwise 6 to 8 times from 1/3 of the way from the stem to resemble a lily for decoration

  • 2 to 3 sprigs each of finely chopped mint and basil

  • 2 tablespoons seasoned nuoc mam (fish sauce)

Cut pork meat lengthwise into 3 to 4 pieces. Cook covered with 1 cup water until done (about 30 minutes). Slice thinly across grain.

Combine shrimp, pork, sweet and sour salad. Drain, Toss the salad with 2 tablespoons seasoned fish sauce.

Transfer all ingredients to a serving dish. Sprinkle the salad with chopped mint and basil. Decorate the center of the dish with the red pepper.
