Chicken Salad

Ethnicity: Vietnamese

Serve 6:

  • 2 cups boned minced cooked breast or parts

  • 1 cup sweet and sour salad (see recipe 42)

  • 4 to 6 strips of pimento

  • 2 to 3 sprigs each of the following vegetables: finely chopped mint and basil

Mix cooked chicken and sweet and sour salad, drain well. Toss the salad with mixture composed of 1 tablespoon  fresh lemon juice, 2 teaspoons salt, 2 teaspoons sugar

Transfer the salad to a serving dish and sprinkle with chopped mint, basil and pimento strips
